2021 : April saw an episode of frost causing severe damage to some vines. Dry winter, rainy spring, major fires on the Maures plain and hail in August… a year far from being a restful one!
Atypical harvests, with the order of ripeness of the grape varieties often turned upside down; usually we start with the Semillon and finish with the Cinsault and Mourvèdre. This year, we started with the Rolles, and soon after the Cinsault was arriving.
It’s a small harvest. Frost, a wet and cold Spring during flowering, followed by a dry summer all contributed to delayed ripening and reduced production. It was a more stressful harvest than usual, because in addition to the threat of the traditional late summer thunderstorms, we had to stop frequently to wait for the grapes to ripen properly, without the teams losing their concentration.
The Syrah is harvested slightly overripe as we wait for the Mourvèdre which takes longer to ripen. After destemming, the two varieties are macerated and fermented together. ‘Pigeage’ or punching down is done by hand before pneumatic pressing and selection. Matured in medium toast 300 liter oak barrels from the forests of Tronçais, Allier, and the Vosges, for 12 months, depending on the vintage. Stirring of the lees or ‘batonnage’ is followed by racking.For 50% of the juice, fermentation takes place in 300 liters French oak barrels (oak from the forest of Tronçais in the Allier region, Nièvre and the Vosges).
The wine is then racked and matured for 6-8 months with regular ‘bâtonnage’ or stirring of the lees. Finally it is blended, fined and filtered and is ready for bottling in April.
A very young purple-violet colour
This wine expresses a veritable symphony of fragrances. They evoke aromas of violet, morello cherry and blackcurrant, as well as pepper, licorice and menthol. Sweet spices such as vanilla and roasted notes, enhanced by well-controlled oak influence, underline the bouquet of this very elegant nose.
After an initial impression of tangy, minty freshness, the wine asserts itself with its volume, power and fullness. The finish is very suave and luscious, with a perfect balance between sweetness and young yet full, elegant tannins.
