Côtes de Provence PDO is famous for its rosé wines. Provence rosé wines account for 92% of AOP Côtes de Provence production. They are mainly made by pressing, more rarely by saignée method. The colour of an AOP Côtes de Provence rosé depends on the maceration time in the press. The shorter the maceration time, the paler the colour. Cold temperature control prior to pressing is essential to obtain clear, aromatic rosés.
White wines in the Côtes de Provence appellation account for just 4% of production. Although not widely consumed, they are just as good as the rosés, fruity and fresh when young and more complex when vinified for ageing in barrels or bottles.
Red wines in the Côtes de Provence appellation also account for 4% of production. More often recognised as complex, structured wines with great ageing potential, these reds can also be supple and fruity, summery reds depending on the blends and grape varieties chosen.
