The explosion in the consumption of rosé wines over the last 15 years is also linked to the incredible choice of food and wine pairings they offer as soon as you sit down to eat, not to mention a gourmet aperitif!

Here are a few ideas, inspired by our family dinners and the menu of our restaurant l’Assiette…

As an aperitif

  • On a fresh baguette generously buttered with fresh fava beans and a sprinkling of fleur de sel
  • Pan-fried clams, with a sprig of parsley and a squeeze of lemon (avoid garlic)
  • Salmon gravelax with dill
  • Anchoïade “à notre façon”: seasonal raw vegetables cut into sticks and dipped in a sauce of salted anchovies melted in olive oil in a saucepan.

At the table with rosés… plenty of ideas!

  • All seafood and shellfish: raw, marinated, sautéed, pan-seared, grilled, poached… Scallops, shrimp, prawns, langoustines, mussels, sea urchins…
  • Raw fish such as sushi, sashimi, ceviche or tartare
  • Fish grilled over soft embers, a la plancha, unilaterally or on a brasero
  • White meats such as poultry of all kinds, veal, lamb… roasted in a casserole or oven, in their own juices
  • Spicy dishes such as tagines, tandoori or curries
